The Reed 5 book is written exclusively for bass sax, but double-staved for baritone. Following the convention above, it should read, ‘bass saxophone [or baritone saxophone]’.

There are a few numbers scored for bass clarinet alone, and these are not double staffed. It’s more accurate to call out bass clarinet specifically.
(You can trade those parts with the reed 4 player to avoid it)
Also, the changes are impractically fast even on bari; you will need to play it on the stand to make roughly half the changes in time.

bassoon [opt bass. clar & bari], bass sax [opt bari], bass clarinet, Bb clarinet
or
bassoon [optional] & the same
IOW, the bassoon parts are all double-staffed for either bari or bass clarinet.
